The chitosan is relatively hydrophobic and the gum arabic dissolves readily in water. Cross-linking brings them together as a composite. The thin film has a tendency to progress from sheet to roll due to molecular interactions such as H-bonding, electrostatic interaction (+/-) and hydrophobic pockets.
